Want to improve your chocolate IQ? Here’s the first lesson in your chocolate education:

There are three main types of chocolate – dark, milk, and white. Dark chocolate is made without any milk added. Milk chocolate, as it says in its name, is made using chocolate liquor and milk powders or solids. This will give the chocolate its lighter color and flavor. White chocolate, though technically not chocolate, is made without any chocolate solids. White chocolate is made using cocoa butter, sugar, milk solids, milk fats and soy lecithins.

Here at Delysia Chocolatier we use all three types of chocolate: dark, milk and white. Today we want to educate you on our multiple types of chocolate. Follow along!

To start, the foundation of chocolate is in harvesting the football-shaped pods found on Theobroma cacao trees. In the case of Delysia, we ethically source our cacao from Ghana. Now we will separate the three main types of chocolate.

Dark Chocolate

First the original decadent confection: dark chocolate. This is the purest form since dark chocolate has the highest percentage of cocoa solids. Dark also has many health benefits, according to the Harvard Medical School’s Health Publications. Cacao beans are rich with a type of plant antioxidant called flavonoids, which reduce blood pressure and prevent blood clots. Milk Chocolate

Next up, milk chocolate is much more fun than the FDA’s rules make it sound! Milk chocolate has a can have a similar or lower cocoa percentage as dark chocolate, but have milk solids added to the chocolate. Those changes give this form a creamier texture and sweeter taste. At Delysia we especially enjoy stirring in smooth caramel, like in our Salted Collection!

White Chocolate

Finally we come to white chocolate. This last form contains cocoa butter, milk solids and sugar. If you desire sweeter tastes, white chocolate is for you! We at Delysia particularly enjoy the shining white chocolate molds that crown wedding cakes, festive plate settings or in our unique peppermint bark

White chocolate has a more controversial side to it. Since it is made without any cocoa, people do not believe it is actually chocolate. Whether you agree with that statement or not, you cannot deny the fact that it is delicious.

Fun fact: if you are allergic to dark or milk chocolate, you can often eat white chocolate without any issues.

To the delight of friends and family, she continued to create chocolates as a way to relieve stress from her corporate engineering job. In 2008, a chance trip to Becker Vineyards led to Nicole being the first in Texas to make truffles using local wines.
