Our products do not contain any additives or preservatives so that you can enjoy chocolate near perfection. All of our truffles are made with the freshest cream, the finest chocolate, and the highest quality ingredients. For optimum freshness, it is important to store your truffles in a cool, dry place. This will allow your truffles to stay fresh for up to two months. If you prefer, you can refrigerate your truffles in an airtight container to prevent odors from spoiling the rich flavors. Please allow the truffles to return to room temperature before enjoying. Or you may prefer to freeze the truffles in an airtight container for up to six months. Again, please ensure that they return to room temperature before enjoying. In warmer months, it is recommended to store your truffles in the refrigerator, as extended periods of warm weather can hinder the wonderful and lasting flavors of the truffles. All of our other products should be stored in a cool, dry place away from direct sunlight. It is not recommended to store our other products in the refrigerator.

Can I ship internationally?

Due to the perishable nature of our products, we do not ship internationally. We also do not offer shipping to Alaska, Hawaii, APO, FPO, or PO box addresses.

How do I track my packages?

Once your order has been processed and shipped, we will email you with tracking information for your shipment.

Is there sales tax on your products?

For your convenience, sales tax will be added to the price of each product during checkout shown unless otherwise stated.

Do you offer quantity discounts?

If you are planning on making a large purchase, we can certainly offer you a quantity discount. Please contact us to discuss this opportunity.

Can I ship to a non billing address?

Your order can be shipped to an address different from your billing address. Simply input both the billing and shipping addresses during the checkout process.

Can I place a wholesale order?

We would love to work with you on a wholesale opportunity. We can offer any of our chocolate products for sale at your establishment. To establish a wholesale account, please email us your completed new client paperwork. For additional information, please contact us to discuss this opportunity.

Dietary restrictions

Here at Delysia, we strive to create chocolate truffles for everyone. We would never want a dietary restriction or allergen to hinder your ability to indulge. Please review our ingredient list for each chocolate to ensure that you are not allergic. Whether you are sugar free, gluten free, dairy free, or require any other dietary restriction, we are more than happy to develop something just for you. For a specific dietary need, please review the appropriate information below.

Gluten free

Most of our products are gluten free, including our hot chocolates, molded chocolates, and specialty confections. All of our chocolate barks are gluten free EXCEPT for the following: peanut butter, eggnog, and s’mores. All of our truffles are gluten free EXCEPT for the following: balsamic vinegar, amaretto, hazelnut liquor, grand marnier, scotch, irish cream, kahlua, s’mores, biscotti, and birthday cake.

Sugar free

For those customers that desire sugar free chocolates, we can certainly accommodate your request as a special order. Please contact us if you desire sugar free chocolates.

Organic

We are more than happy to develop chocolates using organic ingredients as a special order, when possible. Please contact us if you desire organic chocolates.

Kosher

All of our solid chocolate products are kosher. For those customers that desire kosher truffles, we can certainly accommodate your request as a special order. Please contact us if you desire kosher chocolates.

Dairy free

All of our dark chocolate solid chocolate products are dairy free. This includes our dark chocolate based drinking chocolates, molded chocolates, and chocolate barks. The following truffle flavors are dairy free: green tea, dark chocolate, five spice, curry, ginger, and garam masala. We are more than happy to create other dairy free truffle flavors as a special order, when possible. Please contact us if you desire dairy free truffles.

Nut free

Please note that all of our chocolate products are produced in a kitchen that handles nuts. We cannot guarantee that any of our products are fully free from nuts.

Where are these chocolates made?

Our chocolates are produced at our Chocolate Culinary Center and Chocolate Boutique located in Austin, Texas. Each chocolate is handcrafted by our award-winning Chef Owner & Chocolatier, Nicole Patel.

What is the product shelf life?

Our chocolate barks, drinking chocolates, and molded chocolates, when stored in a cool, dry place will stay fresh for up to nine months. Our truffles are made with the freshest cream and finest quality chocolate. For optimum freshness, it is important to store your truffles in a cool, dry place. This will allow your truffles to stay fresh for up to four months. If you prefer, you can refrigerate or freeze your truffles in an airtight container for up to six months. Please allow the truffles to return to room temperature before enjoying. What makes our chocolates different?

Our chocolates are distinctly different. We focus on how the experience of indulging in chocolate can turn any moment into something remarkable. We offer over eighty unique chocolates, from the classic milk or dark chocolate to the unique curry or wasabi. For those customers desiring a little something more, we are more than happy to develop custom flavors and personalized designs by special order.

What chocolate percent do you use?

We use white chocolate, 40% milk chocolate, 65% dark chocolate, and 72% bittersweet chocolate in our creations, depending upon the specific flavor.

What are truffles?

A truffle is a mousse ganache lightly coated with a thin layer of chocolate. Ganache is the center of the truffle. It is a mixture of superior quality chocolate and fresh cream and can be flavored or offered plain.

Cocoa content

Cocoa content, or more specifically cacao content, is the amount of cacao in a particular chocolate. In general, the higher the cacao content, the more intense the flavor of the chocolate and the lower the amount of sugar present. The flavor of chocolate is ultimately determined by the variety of beans that are used and the process by which the chocolate is manufactured. We can categorize cocoa beans into three primary varieties. Criollo, found in Central and South America, are considered the finest beans. They contribute to 10% of the world production, are delicate and offer a slightly nutty flavor. Forastero, found in Africa, Asia, the West Indies, Central and South America, contribute to 80% of world production. These grow faster, are more durable, and provide a stronger taste. Trinitarios are a crossbreed between Criollo and Forastero and are found in Central and South America, Indonesia and Sri Lanka. Trinitarios produce 10 to 15% of world production and offer find cocoa beans with a high fat content.

Quality of chocolate

The quality of a chocolate, like most food, is determined by the quality of the raw ingredients and the care taken when working with those ingredients. The process begins with good beans. These beans must then be properly fermented, dried, roasted, crushed, and conched. The time and care given to each step will affect the quality. Generally speaking, high quality chocolate breaks cleanly, melted rapidly and uniformly in the mouth, and has a long lasting flavor.

Indulging in chocolate

The process of indulging in chocolate is as much an art as it is a science. These helpful hints will offer you the most extraordinary chocolate indulging experience. Make sure your chocolate is at room temperature before enjoying. Take multiple bites to enjoy the chocolate. In the first bite, you are just getting a hint of the flavors. In the second bite, you are diving deeper into the creation and discovering the many amazingly rich tastes. Enjoy the lingering flavors in your mouth. When you are tasting several chocolates, it is best to start with a plain chocolate and then move on to flavored varieties: first with fruits, then spirits and wines, and finally spices.

Flavor pairing

The perfect flavor pairings of wine and chocolate can be absolutely extraordinary. When experimenting with flavors, begin with light flavors and work your way through to dark flavors. When paired correctly, wine should be at least as sweet if not sweeter than the chocolate. This will help to avoid pairings that are instantly bitter or sour. As a rule of thumb, light bodied wines pair well with light chocolates and full bodied wines pair well with dark chocolates. Pinot noir, merlot, and riesling pair nicely with milk chocolate. Cabernet sauvignon, zinfandel, and port work well with dark chocolate. Sherry and muscat offer an ideal match for white chocolate.
