On Our Way to Aspen!

We left Austin yesterday morning and are headed to Colorado for Delysia Chocolatier’s debut at the Aspen Food & Wine CLASSIC. If you’ve ever watched an episode of Top Chef, then you’ll have an understanding of how big of a deal this event is. Thousands of food and wine lovers mingle with the world’s best chefs in downtown Aspen.  We’re hoping some of our favorite chefs stop by for some award-winning chocolate. (Tim Love, we’re talking to you; Please don’t judge us, Tom Colicchio.)

As we hit the open road, we’ve been contemplating who and what we want to see. Really, we just want as many people as possible to taste our truffles and bark. That said, here are some of the events surrounding the CLASSIC.

5K Charity Run
Last Bite Dessert Party hosted by Gail Simmons
Grand Cochon
Sustainable Farming Discussion
Reserve Tastings
DIY Sausage-making with Chris Cosentino
Q&A With Giada De Laurentiis

And numerous other panels and demos featuring chefs like Jacques Pepin, Tyler Florence, Sang Yoon, Andrew Zimmern, Hugh Acheson, Jose Andres…the list goes on and on. We’re just hoping for a random bump-in with Carla Hall.

We are so honored to be at the Grand Tasting. As far as we can tell, we’re the only brand from Texas making the trip to Colorado. We’ll be sure to post a detailed recap once we’re back and the dust is settled.

Nicole Patel

Nicole Patel is the proprietor of and chocolatier for Delysia Chocolatier. In 2006 while pregnant with her first son, Nicole made a batch of chocolate truffles as holiday gifts. To the delight of friends and family, she continued to create chocolates as a way to relieve stress from her corporate engineering job. In 2008, a chance trip to Becker Vineyards led to Nicole being the first in Texas to make truffles using local wines. Within five years, what started as a hobby turned Delysia into one of the Top Ten Chocolatiers in the Americas, as selected by the International Chocolate Salon.
