At Delysia Chocolatier every confection you delight in is even more enjoyable because it’s made with responsibly sourced chocolate. We’re proud to say we’re the first chocolatier in Texas to have an entire product line of fine artisanal chocolates that’s created using only sustainably sourced cacao.

But what exactly is responsibly sourced chocolate?

We’ve gone to great lengths to make sure our products have minimal environmental and social impacts from start to finish. Because of this focus, all of our cacao comes from plantations that are a part of the World Cocoa Foundation. The foundation’s primary mission is to promote and support sustainable cacao farming.

Ethically sourced cacao tastes better because it was grown using practices that minimize the impact on the environment and maximize the gains for the local communities that grow the crops. It’s not only better for the earth, it’s also better for the farmers who are cultivating the cacao.

Crop Diversification

At the heart of responsibly sourced chocolate is cacao that’s grown on farms that use crop diversification and biodiversity. When the same crop is grown on the same plot of land over and over it can deplete the soil leading to lower yields and quality. Farmers that learn to rotate and diversify crops can circumvent these issues.

When these practices are used it helps sustain cacao farming over the long term. That helps to ensure the success of families and farms for generations.

Support for Farming Communities

No chocolate is responsibly sourced if the farmers aren’t treated fairly in the process. The World Cocoa Foundation is supporting farmers through educational programs that help them make business decisions and understand their place in the industry so they get fair prices for their products. These farms have also made a commitment to not use forced labor or child labor to grow cacao crops.

Eco-Conscious Crops

When cacao is sustainably grown that means the farmers take many steps to protect the environment and minimize impact. In addition to crop diversification, the process entails preserving natural habitats, using compost for fertilization and choosing natural pest control over pesticides.

Nicole Patel

Nicole Patel is the proprietor of and chocolatier for Delysia Chocolatier. In 2006 while pregnant with her first son, Nicole made a batch of chocolate truffles as holiday gifts. To the delight of friends and family, she continued to create chocolates as a way to relieve stress from her corporate engineering job. In 2008, a chance trip to Becker Vineyards led to Nicole being the first in Texas to make truffles using local wines. Within five years, what started as a hobby turned Delysia into one of the Top Ten Chocolatiers in the Americas, as selected by the International Chocolate Salon.
