erry is dark chocolate mixed with real raspberries for a rich, tart flavor. Blueberry features our succulent milk chocolate with blueberry purée and dried blueberries – high in antioxidants. And for our Strawberry truffle, we made our own strawberry purée and blended it with white chocolate for a velvety-smooth finish. This pink-tinted-ganache won us a Bronze Award for the International Chocolate Salon’s White Chocolate competition.

The blend of chocolate and berries is not only delicious, it’s good for you too! Both dark chocolate and berries contain flavonoids – antioxidant compounds found in colorful fruits and vegetables as well as other healthy foods. Consuming a diet rich in antioxidants and flavonoids – enhanced with tea, dark chocolate, berries, and red wine – can protect against a wide range of diseases, including heart disease, hypertension, some cancers and dementia. A recent study out of the U.K. indicates that flavonoids may help regulate glucose levels, helping to stave off type-2 diabetes. So giving in to that dark chocolate craving once in a while will do you way more good than harm. Add a glass of earthy red wine and you’re setting out on the path to wellness.

Our dark chocolate products are all at least 60% dark, providing as much of the flavonoids as we can while still creating rich and delicious truffles. Nicole Patel is the proprietor of and chocolatier for Delysia Chocolatier. In 2006 while pregnant with her first son, Nicole made a batch of chocolate truffles as holiday gifts. To the delight of friends and family, she continued to create chocolates as a way to relieve stress from her corporate engineering job. In 2008, a chance trip to Becker Vineyards led to Nicole being the first in Texas to make truffles using local wines. Within five years, what started as a hobby turned Delysia into one of the Top Ten Chocolatiers in the Americas, as selected by the International Chocolate Salon.
