This month at Delysia, our focus has been on health. Yes, chocolate can be healthy!  One thing you may not know about Delysia is that 85 percent of our chocolate is both kosher and gluten free.  And I’ve always made health concerns a priority at Delysia, working to accommodate any special health requests from our customers, including requests for vegan chocolate. If you want to place an order and have a special health request, just give us a shout. So, to share our chocolates with the wider gluten-free health community, I’m so excited to participate in this weekend’s Gluten Free Food Allergy Fest. The conference will be held at the Austin Convention Center on Saturday and Sunday, Feb. 28 and Mar. 1, and will run from 10:00 am to 4:00 pm on both days. I’ve recently made the transition to a gluten-free lifestyle myself for health reasons, so this event is extra special to me. If you’re gluten free — or just like good chocolate — then grab a ticket, and I hope to see you there!

Another thing you might not know about Delysia: our chocolate comes from sustainable sources. We actually made the transition to sustainable chocolate last year. We ran a Kickstarter campaign to raise money for Delysia, in part to fuel a way for us to create the purest chocolate possible. The campaign ultimately fell short of our fundraising goals, but that didn’t stop us. Delysia has partnered with a couverture company that established a Responsible Cocoa program, allowing us to create socially-conscious chocolates. I’m so proud that we’re among one of the few chocolatiers in the U.S. to be crafting sustainable chocolate — and the first in Texas to do so. Perhaps the only thing that makes me prouder is that we managed to do this without passing on our costs to you, our customer. So now you know you can indulge in delicious Delysia chocolate guilt-free!

As February comes to a close, we’re looking to the rest of 2015 as an opportunity to bring Delysia to a wider audience — that means more tasting events, seminars, and  — get excited! — hands-on courses at the Delysia Chocolate Culinary Center. We’ll be posting a schedule to our events calendar in early March, so keep an eye out for it. Nicole Patel

Nicole Patel is the proprietor of and chocolatier for Delysia Chocolatier. In 2006 while pregnant with her first son, Nicole made a batch of chocolate truffles as holiday gifts. To the delight of friends and family, she continued to create chocolates as a way to relieve stress from her corporate engineering job. In 2008, a chance trip to Becker Vineyards led to Nicole being the first in Texas to make truffles using local wines. Within five years, what started as a hobby turned Delysia into one of the Top Ten Chocolatiers in the Americas, as selected by the International Chocolate Salon.
