Start by preparing your dough in advance, ideally a day before you plan to bake. Chill the dough for at least 2 hours, or even overnight, to let the flavors develop and make rolling it out much easier. When you’re ready to cut out your cookies, bring the dough to room temperature before rolling it out, and place the cut-out cookies in the fridge for 30 minutes before baking. Always use a cooled baking sheet for each batch to help the cookies keep their shape and prevent excessive spreading in the oven.

TOP TIP: For baking, aim for a slightly lower oven temperature than many recipes call for—325°F (160°C) is ideal for achieving those perfect cookies with crisp edges and soft centers.
