Notes from the Chocolatier: Regular Store Hours at Our Culinary Center

I am happy to announce that today marks our first day open to the public! Stop by our Austin based Culinary Center during our regular store hours and explore our unique truffle collections, bold chocolate barks, holiday themed molded chocolates, and rich hot chocolate mixes. Our chocolates are handmade with the finest, freshest ingredients right here in the kitchen of our Culinary Center.

My passion is to bring European style chocolate to Texas and beyond.  Our Culinary Center has become a key factor in the success of that goal.  Our center is more than a production facility, it’s a space where customers can get the full experience of what we do here at Delysia Chocolatier. I welcome you to expand your palette and broaden your views of what chocolate can taste like. With exceptional flavors like Chicken Honey Biscuit and Smoked Salted Bourbon Pecan, we offer a fresh take on traditional Parisian style truffles.

It is my pleasure to introduce you to the newest members of the Delysia family, Melissa & Anna. We have been having a fun and busy start to the fall season. Please stop by the Culinary Center and say ‘Hi’!

Melissa Timko

Melissa is a designer, illustrator, and food enthusiast. She works as Delysia Chocolatier’s Marketing Coordinator & Strategist and sometimes even as a taste tester. In her free time, Melissa enjoys hiking and exploring new parts of Austin.

Anna Santucci

Anna is a recent resident of Austin, TX working at Delysia as their Event Coordinator and Brand Ambassador. She’s a huge lover of food, dogs, and traveling and enjoys spending her free time paddle boarding with her pup, Dax, and listening to live music around Austin.

Nicole Patel

Nicole Patel is the proprietor of and chocolatier for Delysia Chocolatier. In 2006 while pregnant with her first son, Nicole made a batch of chocolate truffles as holiday gifts. To the delight of friends and family, she continued to create chocolates as a way to relieve stress from her corporate engineering job. In 2008, a chance trip to Becker Vineyards led to Nicole being the first in Texas to make truffles using local wines. Within five years, what started as a hobby turned Delysia into one of the Top Ten Chocolatiers in the Americas, as selected by the International Chocolate Salon.
