Notes from the Chocolatier: Father’s day weekending

As we enter the month of June, I can’t help to think how far we, Delysia Chocolatier, have come with the many accomplishments our establishment has received throughout the years. It’s been a wild ride, and I could not have done it without the special man in my life who offered an endless amount of support during the hard and happy times of owning a business.

My husband is an impeccable father to our two boys that are now out for summer and still at the moment trying to decide which camps they want to attend. Please hurry!  

Every year during Father’s Day weekend, we pack up the suitcase, our trailer, a bunch of chocolate and a few friends to start our journey for the Aspen Food & Wine Classic in Colorado. Though this means work for my husband, he’s expressed these are the memories he lives for and he wouldn’t want to spend this special weekend any other way. Especially since he’s played a big part in brainstorming some of our more outrageous flavors. Boy did I get lucky.

We’re so excited to share our creation of tastes from “Around the Globe” at the 2017 Aspen Food and Wine Classic for the fourth year in a row. Our flavors this year will heighten your taste buds to a variety of exotic flavors that are inspired by the most popular dishes and beverages in each country. Yes indeed, this was a very challenging project, but with the help and support from my team and family, we achieved!

I think about my husband quite often during the day and how much love he’s brought into my life. Thank you to my husband for being my number one advocate to chase what I dream of and being the ultimate role model for our children.

Nicole Patel is the proprietor of and chocolatier for Delysia Chocolatier. In 2006 while pregnant with her first son, Nicole made a batch of chocolate truffles as holiday gifts. To the delight of friends and family, she continued to create chocolates as a way to relieve stress from her corporate engineering job. In 2008, a chance trip to Becker Vineyards led to Nicole being the first in Texas to make truffles using local wines. Within five years, what started as a hobby turned Delysia into one of the Top Ten Chocolatiers in the Americas, as selected by the International Chocolate Salon.
