Celebrate Delysia’s 9th anniversary this October


Two exciting things are happening this month. For one, October is Texas Wine Month. For another, October 3rd is our 9th anniversary here at Delysia Chocolatier. The timing makes perfect sense to us: wine and chocolate are a perfect pair.

Plus, wine holds a special place in our hearts here at Delysia.

The story of Delysia Chocolatier

When our founder Nicole Patel first made truffles in her kitchen nine years ago, it was as last-minute holiday gifts. But when her friends and family absolutely loved them, she began toying with the idea of selling them at local fairs on occasion. Maybe her chocolates could be a sweet side hustle in addition to her day job as an engineer, bringing in some extra cash for a family vacation.

Then Becker Vineyards changed all that. On an impromptu pit stop on her way back to Austin after a road trip, the Beckers asked Nicole to create truffles with their wines. The date was October 3rd, 2008. It marked her first official delivery as Delysia Chocolatier, and the first time Texas wines were included in chocolate truffles. Less than a year later, Nicole launched Delysia Chocolatier as a full-time business.

Nine years later, Nicole has made a name for herself with Delysia’s award-winning artisan chocolates. Delysia is the first chocolatier in Texas to exclusively use ethically sourced cacao in our products. And our chocolates pay a loving tribute to our home state, using local ingredients from our favorite partners like Becker Vineyards.

Nicole Patel

Nicole Patel is the proprietor of and chocolatier for Delysia Chocolatier. In 2006 while pregnant with her first son, Nicole made a batch of chocolate truffles as holiday gifts. To the delight of friends and family, she continued to create chocolates as a way to relieve stress from her corporate engineering job. In 2008, a chance trip to Becker Vineyards led to Nicole being the first in Texas to make truffles using local wines. Within five years, what started as a hobby turned Delysia into one of the Top Ten Chocolatiers in the Americas, as selected by the International Chocolate Salon.
